wanna banana muffins

It was a public holiday for the state of Selangor yesterday. After running some errands in the morning (I mailed those Raya cards, returned my proximity card and got my refund, yay!), and some light shopping after that, I still had some time on my hands to spare before dinnertime. Ah, why not bake something?

Hmmm… Some bananas left, a new bag of flour, fresh block of butter, sugar, this and that… Right-o, Banana Muffins it was, thanks to the All Recipes website for this quick and simple recipe.

Prep time: 10 Minutes
Cook time: 15 Minutes
Ready in: 25 Minutes
Yields: 12 servings

INGREDIENTS:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted

DIRECTIONS:

  • Preheat oven to 350° F (175° C).
  • Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda and salt. Set aside.
  • In a large bowl, combine bananas, sugar, egg and melted butter. Add flour mixture, and beat until smooth. Scoop into muffin pans.
  • Bake in preheated oven for 25 to 30 minutes. Muffins will spring back when lightly tapped.

RESULTS:
Ok, so they don’t look all that extraordinary. Muffins look like muffins. Nothing to shout about in terms of appearances.

As for the taste…

Yum, Yum, YUM!!!

Seriously, these muffins taste fantastic! And I’m not saying it because I baked them and wanna blow my own horn. This recipe is a keeper if you want to make banana muffins. Much better than the plain and raisin ones I made a few weeks ago, too.

At first I wondered if I needed to add in some banana essence to enhance that fruit flavour, but the 3 large mashed bananas did the job very well. If you’re not the kind who likes your muffins too sweet, I’d suggest reducing the sugar to slightly more than 1/2 cup, especially if your bananas are really ripe and sweet themselves. If they aren’t and you have a sweet tooth, then stay with the 3/4 cup sugar.

    hmmm… i’m torn between two reactions… i love muffins, but i hate bananas… yeeeuuuch… banana loaves, bananas in general, any banana chocolate cake…

    king’s wife - pisang emas is the small ones for deep frying, yes? I used the big ones for this recipe. not sure what they are, I’m quite bad with breeds, hahaha! but these are not del monte either, so must be rastali, the big ones. try it this weekend, reduce the sugar to 1/2 cup, can get quite sweet liao.

    ah nel - whichever pasar you haven’t featured before lah. I’m sure there’s more than 1 pasar in the town where you live. so you like banana or ham cheen peng or both ah?

    kat - I’m quite used to both types of measurements, actually. there’s a couple of online conversion sites which are quite handy in getting the right amounts, in the units we’re familiar with. 1/3 cup is about 75grams. hey, you’re quite on the spot there!

    Chen - I need a bigger oven to make that Gigantic-er Muffin™ ler!! mine isn’t nearly as big as required. small, portable one only wor, how? must borrow Secret Recipe’s oven ah? I’m lazy at times too, which is why I only pick the easiest of recipes to try, not the ultra-complicated ones!
