easy peasy muffins

A lazy Sunday where I didn’t have any plans. No one to meet up with, no movies to watch, didn’t feel like going to the gym. What could I fill my time with?

I could either wash the car, or bake some muffins.

Ok, muffins it is! The rain would take care of the car later. Besides, I haven’t baked in awhile, and I think some of you have already given up on seeing another recipe here! Never fear, there’ll always be one or two sprouting up one day or another.

I did my usual surf on the All Recipes website, and found this really easy recipe to follow for Best Ever Muffins.

Prep time: 10 minutes
Cook time: 25 minutes
Ready in: 35 minutes
Yields: 12 servings

ingredients

INGREDIENTS:
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil

DIRECTIONS:

  • Preheat oven to 400° F (205° C).
  • Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center.
  • In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil.
  • Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
  • Bake for 25 minutes, or until golden.

This recipe also allows for variations if you don’t want plain muffins. I opted to add 1 cup finely chopped raisins to my second batch. You could also try these other variations:

  • Blueberry Muffins: Add 1 cup fresh blueberries.
  • Date Muffins: Add 1 cup finely chopped dates.
  • Cheese Muffins: Fold in 1 cup grated sharp yellow cheese.
  • Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.

RESULTS:
The muffins are easily made, but a tad dry for the plain ones. Hmmm, maybe I should’ve added either more oil or milk. Either way, the taste is not too sweet, and rather springy texture. I had one with some strawberry jam and it makes up for the lack of “excitement” to its plainness. Not too bad…

The raisin muffins turned out way better! A little more moist, slightly sweeter because of the natural sugary content of the golden raisins, and definitely a better chew. Just in time for tea!

Ahhh, I think I’ll go get a glass of cold milk while I’m at it…

    cp1 - oooh, chocolate muffins always a sure winner!! taruh lots of chocolate chips, and maybe you could make those lil’ mini cupcakes instead of these bigger ones. bite-sized, easy to eat, very addictive too!

    king’s wife - an unused muffin tray? donate it to me lah! hahaha! pig-out Sunday indeed. I didn’t do anything much but eat them muffins and watch some movies (all unfinished, got bored with most of them after 15 minutes or so… sheesh!).

    gbyeow - that one dinner, this one dessert mah! how could a meal be complete without desserts? or appetizers. this is pretty good both ways… ;)

    Winn - uik, you no like milk, hor? ok ok, satu milo ais kurang manis, boss!! my Mom buys those packs of pre-mixed ingredients from the bake shops too, but I kinda prefer to gather all the ingredients individually. that’s half the fun! jom bake with Winn!!

    Chen - yea, I know the feeling exactly! all those hours put in for a couple of dozen muffins, when in just 5 minutes I could’ve bought them at the bakery. but different lah, get to main masak-masak, quite fun also. you mean oats is Sotong feed? a new breed of oat-eating Sotongs?

    They look really good. I never succeeded baking with vegetable oil. The texture of the muffins/cake turned out weird. The only exception was carrot cake.

    zeroimpact - you and lots of others! but ahhh… not guaranteed that they’ll always turn out good, more often than not the photos look way better… wakakaka! if get food poisoning then how? need Doktor Chen to be on standby for resuscitation?

    helen - uh-huh!! I wanted to make stuff with blueberries so many times, but the fact of having to fork out so much for a small punet puts quite a damper on it…

    moopig - long time no see!! I never had any problems baking with vege oil. maybe it’s the type of oil found here, eh? it’s like how fresh mascarpone cheese in Italy is so different from the pre-packed ones here. hey, try some recipes with vege oil here, maybe you’ll have good results with ‘em this time!
